  • 1 whole-grain tortilla
  • 1 cup of fresh spinach leaves
  • 1/4 cup of crumbled feta cheese
  • 2 egg whites
  • 1 whole egg
  • 1/4 cup of diced tomatoes
  • 1/4 cup of sliced red onions
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Optional: sliced avocado or a spoonful of salsa for topping


  1. In a non-stick skillet, heat the olive oil over medium heat.
  2. Sauté the onions until they are soft, then add the tomatoes and cook for another minute.
  3. Beat the egg whites and whole egg together in a bowl, and pour into the skillet.
